Easy Gluten-Free Waffles {Dairy-Free Option}
It’s so easy to make gluten-free waffles {dairy-free option} from scratch, you’ll never try a box mix again.
I’m not sure how things are at your house on Saturday mornings, but over here, Saturday morning breakfast is a big thing! Biscuits and sausage gravy, bacon, eggs, pancakes….and waffles. Yum! I grew up with this tradition and have kept it going in my family. We usually eat our big breakfast and head outside to start on whatever project we have lined up for the day.
My dad was the breakfast cook at my house growing up-and man can he cook! No one can make homemade biscuits like my dad, he is the man. He used to make these giant homemade waffles and now I make them for my kids. My son, Levi, absolutely loves these waffles. In fact, he requested them to be the main dish at his birthday party this past year. Ha! They were a hit. I mean, who doesn’t love fluffy waffles with hot syrup and bacon?
I have made a few minor changes to my dad’s tried and true recipe. One of them being making it gluten-free (with a dairy-free option as well) so that my eldest daughter and I can enjoy them with our family as well. We love them plain, with chocolate chips, blueberries…you can enjoy them so many different ways. Each one is delicious, I guarantee it 🙂
Tips For Better Gluten-Free Cooking
Not all Gluten-Free flours are created equal. I like using a cup for cup gluten-free rice flour blend like Bob’s Red Mill. A cup for cup all-purpose gluten-free flour blend is one that already has xanthan gum it which helps replace the elasticity and texture of gluten.
It’s best to use the “spoon & level” method when measuring gluten-free flour. Instead of using the measuring cup to scoop the flour out of the bag use a spoon and scoop the flour into the measuring cup then use a knife to level it off. This helps prevent you from using too much flour in your recipe.
Ingredients
- 2 Cups All-Purpose Gluten-Free Flour 1:1 ratio
- 2 tsp Gluten-Free Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 Cup Oil or melted butter
- 2 Eggs
- 2 tsp Gluten-Free Vanilla Extract
- 1 3/4 Cup Milk or milk substitute (I often use Almond milk)
How To Make Gluten-Free Waffles {Dairy-Free Option}
- I always like to start my recipes by mixing the wet ingredients first. So, to a large mixing bowl or stand mixer, whisk together the eggs (or egg replacer), pure vanilla extract, and oil. I typically use melted butter or coconut oil for a dairy-free version.
- To a separate bowl, add the gluten-free flour, gluten-free baking powder, baking soda and salt. Whisk together then gradually add to the egg mixture and mix until fully combined.
- Stir in milk (or milk alternative) and mix until smooth.
- Use a greased scoop or measuring cup to pour the batter onto a greased, preheated waffle maker.
- Cook the waffles according to the waffle maker’s directions or until they are golden brown. I typically use my Cooks 6 inch rotating waffle maker or mini heart shaped waffle maker for special occasions and Valentine’s day to be a little more festive.
- Top with butter, fruit, homemade whipped topping or warm maple syrup and enjoy!
- Store leftovers in an airtight container for up to 3 days. These waffles also freeze beautifully. Simply place waffles (once cooled) on lined baking sheet and flash freeze for 10 minutes. After the 10 minutes, place waffles in gallon size freezer bags or freezer safe container.
How To Freeze Waffles
I love to batch cook, meal prep and freeze meals. As a busy homeschool mom of four, I don’t have the time to spend hours in the kitchen every morning preparing a from-scratch gourmet feast for breakfast. However, I want my children to have a delicious and nutritious meal that meets their dietary needs and allergy requirements.
You can easily buy frozen gluten-free waffles from your local health food store and trust me, I do occasionally purchase them! But I try not to make it a habit. These are so easy to make at home, I can control the ingredients and it’s much more cost effective.
To freeze the waffles, allow them to completely cool. Place them on a parchment-lined baking sheet and flash freeze them for 10 minutes. Flash freezing them keeps them from sticking together. Once they are flash-frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or air-tight container.
You can also make this gluten-free waffle mix ahead of time and store in an air-tight container for later. Just like a gluten-free waffle mix from the store, but so much better-and cheaper! So later, all you will have to do is add the wet ingredients.
You can also make the waffle batter the night before and store it in the refrigerator for up to 48 hours. Makes breakfast time super easy. Or store the cooked waffles in an air-tight container for up to three days before serving them. I just reheat them in the toaster and they’re perfect.
Gluten-Free Waffle {Dairy-Free Option} Variations and Topping Ideas
Waffles are so fun and can be enjoyed any time of day. They can be sweet, they can be savory, they can be breakfast, dinner or dessert! Below are some ideas of different add-ins or toppings you can add to your gluten-free waffles.
Add-ins
- chocolate chips
- blueberries (swap out the vanilla for some lemon extract and enjoy lemon blueberry waffles)
- finely diced bacon
- mini cinnamon or butterscotch chips
- peanut butter (about 1/4 cup for every cup of flour)
Toppings
- fresh berries and whipped cream (raspberries and blueberries are our favorites!)
- peanut butter
- bananas
- pure maple, blueberry, strawberry or blackberry syrup
- chicken tenders (for savory)
- ice cream (for dessert)
