Classic Gluten Free Cherry Pineapple Dump Cake
Summer is almost here and I am so excited! The Fourth of July, is one of my absolute favorite holidays. Summer cookouts are all about family, food and fun. Am I right? Don’t get me wrong, I love Thanksgiving and Christmas, but nothing beats the laid back vibes of summer. It’s barely June and we’ve already hosted and attended several cookouts. If you’re like us, then you know it can be a little tricky trying to find a gluten and/or dairy free dessert or dish to take.
For years, my mom has made this ‘easy cobbler’ with cherry and pineapples topped with homemade ice cream. It’s become one of our family favorites! However, since going gluten-free I hadn’t even tried to recreate it I would normally just do without dessert….until now. Why had I never tried to make a gluten-free version before?!

I’m not sure what took me so long, but I finally made a gluten-free version and I can’t wait to share it with you! It’s so easy, you won’t believe it. No need to slave away in a hot kitchen, it only takes about 5 minutes to assemble so you can better spend your time outside with friends and family.
Ingredients
- Crushed Pineapple-As you can see by the pic, my store only had pineapple chunks. All I did was simply slice the chunks into smaller pieces-easy fix!
- Cherry Pie Filling-Really any cherry pie filling will work. We have a red dye allergy in our house so I always double check to make sure there are no added dyes because cherry pie filling often has red dye added. So if you or someone who will be enjoying this dessert has a red dye sensitivity or allergy be sure and double check the ingredients!
- Butter-I always prefer to bake with unsalted butter. It’s best to use cold butter, because it will slice much easier! However, if you are dairy-free use your favorite non-dairy butter alternative. Make sure it’s a ‘stick’ butter alternative to avoid any greasy, unpleasant results.
- Gluten Free Yellow Cake Mix-This is one of my favorite boxed cake mixes from Aldi. Krusteaz is also one of my favorite brands of gluten free boxed mixes.
And that’s it! This recipe is so simple and really only requires 4 ingredients!
If you’re not gluten free, no worries! Just use regular yellow cake mix. Dairy-free? Use your favorite dairy-free or vegan butter instead of regular butter.
How To Make Classic Gluten Free Cherry Pineapple Dump Cake
- Preheat oven to 350 F.
- Pour one 20 oz can of crushed pineapple (with juice) to a 9×13 pan.
- Pour one 21 oz. can of cherry pie filling over pineapple and spread evenly.
- Take one box of gluten-free yellow cake mix and evenly spread over the cherry pie filling. Carefully press the cake mix down, this helps create the most delicious crust!
- Slice one stick of butter into small squares and lay evenly across the cake mix. This will create a nice crust.
- *Optional-add chopped pecans or walnuts for a little extra crunch.
- Bake 35-45 minutes or until topping slightly brown.
- Enjoy!
RECIPE VARIATIONS
The fantastic part of dump cakes is the endless variations! Here are some ideas!
- Blueberry Lemon dump cake would be fantastic. Use a gluten-free lemon cake mix with blueberry pie filling.
- Apple Pie Filling in place of the cherries and pineapples. Serve with caramel and vanilla ice cream-yum!
- Peach-tastes just like a peach cobbler, but so much easier to make!
- Add chopped walnuts or pecans for a ‘cherry crunch’ dump cake.
How To Store Dump Cake
According to food handling directions, this will store for about 2-3 days in the fridge-if there are any left that is! I think it’s best for the first two days.
I don’t typically recommend freezing. It’s hard to recreate that delicious crisp topping, but you can certainly freeze it if you like!
