Easy And Fluffy Gluten-Free Pancakes Recipe
I don’t know about you, but my kids love pancakes. Breakfast, lunch, dinner, it doesn’t matter. If I make them, they will eat them. All of them!
When we first discovered mine and my daughters gluten sensitivity, their weren’t a lot of options as far as pancake and waffle recipes. We really enjoyed the Krusteaz Gluten Free Buttermilk Pancake Mix. It’s delicious! And a great option if you’re in a bind.
We make pancakes so regularly though, that it didn’t make sense to be spending that much on a mix that I could easily make myself. And I could make it a bit healthier too. Save money AND be healthier? It was a no brainer!
But I really didn’t want to give up that delicious, fluffy taste. That’s when I decided to try and modify my old tried and true pancake recipe to be gluten-free. It was an easy recipe to modify, and the pancakes turned out light and fluffy! I can’t wait to share it with you.
Ingredients
- Glute-Free Flour-The base for these gluten free pancakes is of course the gluten-free flour. My personal favorite is Bob’s Red Mill 1-to-1 Gluten Free Baking Flour. But any Gluten Free flour blend that is a measure to measure or 1:1 should work.
- Baking Powder-This is what makes these gluten free pancakes nice and fluffy.
- Salt– Enhances the flavor and helps the pancakes rise.
- Sugar– Helps with the texture and adds a little sweetness.
- Milk-Adds flavor and texture. Also helps the pancakes fluff up. You can use either whole milk or a dairy free milk.
- Egg-Bind everything together and help with the texture.
- Unsalted Butter (or Oil)– This adds great flavor to the pancakes. I personally prefer butter but refined coconut oil or avocado oil are great options if you’re needing a dairy free version.
- Vanilla Extract– This is optional, but it adds great flavor! I recommend using a good, high quality vanilla. You can taste the difference!
Tips For Using Gluten Free Flour
These gluten-free brownies were made with a cup for cup all-purpose gluten-free flour blend. A cup for cup blend already has the starches and xanthan gum it needed to replace the elasticity and texture of gluten. So no need to any more! If you do, you’ll end up with gummy brownies.
The best way to measure gluten-free flour is the “spoon & level” method. Using a spoon, scoop the flour into the measuring cup. After you’ve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.
Unlike traditional baking, in gluten-free baking do not scoop the flour out of the bag with your measuring cup. If you do, you will most likely end up with more flour than the recipe calls for.
I like Bob’s Red Mill gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.
How To Make Easy And Fluffy Gluten Free Pancakes
- The first step in making these amazing pancakes is to add all the dry ingredients together. To a medium sized bowl add the gluten-free flour, gluten-free baking powder, salt and sugar and whisk together until combined.
- In a separate bowl add the milk, egg and vanilla and whisk together until the egg is well combined.
- Slowly add the wet ingredients to the dry and mix until smooth.
- Stir in melted butter and slowly incorporate.
- Scoop the batter into a ¼ cup measuring cup and pour the batter onto a greased griddle or pan for each pancake.
- Cook the pancakes until the batter starts to bubble a little and the pancakes start to puff. Flip/turn over the pancakes and cook the pancakes until they are golden brown.
- Serve hot. Top with butter, syrup or favorite topping. Enjoy!
- This recipe can be doubled or tripled.
- These pancakes can be frozen and reheated in the microwave. To freeze the pancakes, allow them to completely cool and place them on a parchment lined baking sheet and flash freeze them for 10 minutes. Flash freezing them keeps them from sticking together. Once the pancakes are flash frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or air-tight container.
Dairy-Free Pancakes
It’s very simple to make these pancakes dairy-free! My son and I are also dairy sensitive so I frequently make these dairy-free as well.
Simply replace the butter with a a vegan butter or neutral flavored oil like avocado or refined coconut oil which is my preferred oil of choice.
Also, switch out the whole milk for a dairy-free milk like almond milk.
Variations and Add-Ins to Try For Easy And Fluffy Gluten Free Pancakes Recipe
Pancakes are so fun and can be enjoyed any time of day. They can be enjoyed anytime of day, they can be breakfast, lunch or dinner. Below are some ideas of different add-ins or toppings you can add to your gluten-free pancakes.
ADD-INS
- chocolate chips
- blueberries (swap out the vanilla for some lemon extract and enjoy lemon blueberry pancakes)
- banana
- mini cinnamon or butterscotch chips
- bacon pancakes-add diced cooked bacon

- fresh berries and whipped cream (raspberries and blueberries are our favorites!)
- peanut butter
- bananas
- pure maple, blueberry, strawberry or blackberry syrup
