Easy Gluten-Free S’mores Cookie Bars
I made these cookies for my youngest sons first birthday and they were phenomenal! Everyone loved them. The theme was “One Happy Camper” and they couldn’t have been more perfect. We go camping every year and our kids absolutely love it, but what kid doesn’t?
We had such a good time and these cookies were the perfect addition to our camping theme party! I plan on making them today August 10th as it’s National S’mores Day for our homeschool. Yet another reason why we love to homeschool 😉 We have loved this recipe and hope you do as well!
Ingredients For Easy Gluten-Free S’mores Cookie Bar Recipe
- Baking Soda
- Salt
- Unsalted Butter (dairy-free butter substitute)
- Light Brown Sugar
- Granulated Sugar
- Eggs
- Vanilla
- Regular Sized Chocolate Bar (dairy-free chocolate bar)
- Marshmallow Fluff
Gluten-Free Flour
I used Bob’s Red Mill gluten-free flour for these gluten-free s’mores cookie bars. Personally, it is my favorite cup for cup gluten-free all-purpose flour blend made with rice flour. A cup for cup gluten-free flour blend is one that already has starches and xanthan gum added to it.
Cup for cup (or 1 for 1) flour blends makes gluten-free baking so much easier! Make sure you do not add any extra xanthan gum to your flour if it already has it in it. If you do, your cookies will be super gummy! Not all gluten-free flour blends are created equal so keep that in mind when choosing a flour!
Some other great brands are Pillsbury Gluten-Free flour and King Arthur Gluten-Free Flour Blend. Another thing to keep in mind with gluten-free baking is to weigh your flour instead of using a measuring cup. Or use a spoon to scoop the flour into the measuring cup, being careful not to pack the flour into the cup. Please do not scoop the flour out of the bag with your measuring cup. If you do you could get more flour than the recipe calls for.
Dairy-Free Baking
This recipe is fairly easy to make dairy-free. I and a few other members of my family are sensitive to dairy as well so I often make dairy-free versions of these recipes.
To enjoy these s’mores cookie bars dairy-free switch out the butter for a dairy-free alternative butter. I like to use Earth Balance Butter. Instead of the Hershey’s chocolate bars, use a dairy-free chocolate bar. My favorite is Enjoy Life Chocolate Bars. Trust me, you will not be disappointed!
How To Make This Easy Gluten-Free S’mores Cookie Bar Recipe
If you love s’mores, then you are for sure going to love this recipe! It’s everything you love about s’mores, minus the fire. They’re perfect to make ahead and take on a camping trip, enjoy at a summer bbq or all year long!
- First preheat your oven to 350F and lightly grease a 9 x 13-inch baking dish.
- Then in a mixing bowl, whisk together the gluten-free flour, gluten-free graham cracker crumbs, baking soda, and salt.
- I like to put the gf graham crackers in a food processor and process for just a few seconds to get the crumbs. You can also put the crackers in a resealable bag and use a rolling pin. Roll back and forth over the crackers until they are crumbs.
- Next, to a stand mixer (or another mixing bowl), mix together the butter and sugars until light and fluffy. Mix in the egg and vanilla until well combined, then slowly add in the flour mixture.
- Split the cookie dough in half. Then evenly spread the dough on the bottom of the 9×13-inch baking dish. Butter or grease your hands a little so they won’t stick to the dough too much. You can use your fingers or back of a fork to help form a nice even layer.
- Unwrap the chocolate bars and place them in a single layer on top of the cookie. Break the bars into pieces to fit around the edge if necessary. I used the regular Hershey’s chocolate bars (not the king size) or dairy-free chocolate bars if needed.
- Spread the marshmallow fluff on top of the chocolate bars. Do NOT use regular marshmallows. They will melt.
- Lastly, you’ll want to cover the marshmallow fluff with the remaining cookie dough. Roll out the remaining dough on a piece of parchment paper or silicone mat to form a 13×9 inch rectangle (the same size as your pan). Flip it over on top of the marshmallow fluff then peel off the parchment paper or silicone mat. With your fingers fix any holes, but don’t worry if there are some open spots!
- Bake until golden brown around the edges.
Be sure to cool the S’mores Bars so you can cut into squares. (If you can wait that long!) The chocolate and marshmallow may be a little ooey gooey while warm. I personally love that, but if you don’t , let them cool completely first. These are also delicious chilled! It makes them a little less messy too.
How To Store S’mores Cookie Bars
You can store these cookie bars by simply leaving them in the baking dish and covering them with an air-tight lid. They can stay on the counter or refrigerator for up to 3 days (if they last that long!). Personally, I’ve never had them last more than a day or two!
